But Shibazuke in Ohara, Kyoto is eggplant.
As featured on TV’s Bratamori the other day, the ingredients for Ohara’s eggplant shibazuke are as simple as eggplant, red shiso, and salt! In fact, when you eat it, this is sour. If you are not used to eating it, it just seems sour.

I sometimes go touring by motorcycle in the Ohara area, so I stop by a direct sale place called “Sato-no-Eki Ohara” on the way to buy some pickled eggplant in shibazuke.
