Water in Kyoto is soft water

There is an expression that water does not match, and in fact, the taste of water varies considerably from region to region within Japan.

Kyoto City’s tap water is almost exclusively water taken from Lake Biwa.
Kyoto’s water is so-called soft water that contains no minerals and has a soft taste.

When Kyoto people go to Kanto and drink the local water, their mouths prickle.
This is really distinctive.
I once bought cheap mineral water at a commercial supermarket and drank it, but it was hard water that contained minerals and was undrinkable.

The water in Kyoto is soft water so I think the thin soup stock is used for cooking there.
I think that that Kyoto is a famous spot for producing sake is also because the water is soft and delicious.

But there are some cases where the tap water in Kyoto City has a strong chalky smell on some days, so I sometimes think that I want to attach a water purifier.
